Therefore, this study aimed to get and define natural extracts from Melinis minutiflora inflorescence (M), Plinia. cauliflora peel (JP) and P. cauliflora peel and seeds (JPS) and apply all of them as all-natural food dyes in gelatins. The extracts would not show statistically considerable variations in pH values and water task.
